Zingermans Scottish Bap Biscuits

  • 1 1/2 cups room temperature whole milk

  • 1/4 cup room temperature water

  • 6 tablespoons room temperature unsalted butter

  • 2 tablespoons honey

  • 2 teaspoons instant yeast

  • 4 cups all purpose flour

  • 1 1/2 teaspoons sea salt


Preheat the oven to 400 F.


In a mixing bowl combine the milk, water, butter, honey, yeast and half of the flour.


Add the rest of the flour and the sea salt and stir to combine.


Scrape the dough into your work surface and knead for 8 minutes.

Once kneaded, spray the bowl with nonstick spray and place dough back into the bowl and cover with plastic. Let rise 1 hour.


Flour work surface and scrape dough onto it. Divide dough into 18 equal sized pieces and shape each into a ball. Flour the tops of the balls and let sit covered with plastic for 10 minutes.

After 10 minutes flatten balls with your hand and roll with rolling pin to get 4” long ovals.


Fliur the tops of the ovals. Press hard into the middle of each oval with your thumb so there is an impression in the dough.

Place the ovals onto a parchment lined pan.

Cover the ovals with plastic and let rest 45 minutes.

Once doubled in size sift flour over the baps and press the center again with your thumb.

Bake 7-10 minutes or until light golden brown.
