Pizza Blanca

Pizza Dough:

  • 1 cup warm water (110 degrees F/45 degrees C)

  • 1 (.25 ounce) package active dry yeast

  • 1 teaspoon white sugar

  • 2 ½ cups bread flour

  • 2 tablespoons olive oil

  • 1 teaspoon salt

Preheat oven to 450 degrees. Lightly grease a pizza pan.


Place warm water in a bowl; add yeast and sugar. Mix and let stand until creamy, about 10 minutes.


Add flour, oil, and salt to the yeast mixture; beat until smooth. You can do this by hand or use a stand mixer fitted with a dough hook to make it easier. Let rest for 5 minutes.


Turn dough out onto a lightly floured surface and pat or roll into a 12-inch circle. Transfer to the prepared pizza pan.


Ricotta Layer:

  • 1/3 cup whole milk ricotta

  • 1/8 teaspoon thyme

  • 1/8 teaspoon oregano

  • 1/2 teaspoon salt

  • 1/16 teaspoon pepper

  • 2 tablespoons olive oil

  • 4 cloves minced garlic

  • 8 of fresh mozzarella thinly sliced

  • 1/3 cup grated Parmesan

Brush rolled out pizza douch with olive oil and minced garlic.


In a small bowl, mix together ricotta, salt, pepper, and herbs.


Spread mixture into a thin layer across the pizza.


Layer with thin slices of fresh mozzarella, and half the parmesan cheese.


Bake for 10-15 minutes, until cheese is melted and bubbly and bottom of crust is golden brown.


Remove from oven and sprinkle with remaining Parmesan.
