White Bean Chicken Chili

  • 1 Tb extra virgin olive oil

  • 1 large onion, chopped

  • 4 cloves minced garlic

  • 2 lbs ground chicken

  • 1.5 t salt

  • 3 Tb cumin

  • 1 Tb fennel seeds

  • 2 Tb oregano

  • 3 t chili powder

  • 1 t smoked paprika

  • 3 Tb all purpose flour

  • 4 c low sodium chicken stock

  • 1 large bunch red swiss chard, remove stems and chop into 1" pieces

  • 2 cans drained and rinsed cannellini beans

  • 1.5 c frozen sweet corn

  • Pinch salt and pepper to taste

  • Pinch crushed red pepper

  • Fresh grated Parmesan and fresh chopped parsley for garnish

  • Tortilla chips for dipping if you want!


Heat a large nonstick sauce pot over medium heat add oil and saute onions several minutes.


Add garlic saute 30 seconds more.


Stir in ground chicken. Brown and season with salt, cumin, fennel, oregano, chili powder, smoked paprika.


Stir in flour and cook additional 3 minutes.


Pour stock in and increase heat to high. Once boiling reduce heat to medium low. Stir in drained beans, Swiss chard and corn. Simmer uncovered 60 minutes.


Chili liquid should reduce significantly.


Taste and season as necessary with salt, pepper and crushed red pepper.


Top with freshly grated Parmesan, parsley and tortilla chips
