Tuna Melt

  • 1 (12 ounce can) chunk light tuna, drained

  • 1/4 cup light mayonnaise

  • 2 teaspoons dijon

  • 1 1/2 teaspoons balsamic vinegar

  • pinch salt

  • pinch pepper

  • 1 tablespoon diced dill pickle

  • 1 tablespoon fresh minced basil

  • 6 tablespoons shredded medium cheddar cheese

  • 3 slices whole wheat bread

  • Sliced roma tomato


Preheat oven to 375.


While oven is preheating put the sliced bread on a baking sheet to toast in it while you make your tuna salad.

Drain tuna of liquid extremely throughly.

In a medium bowl stir together mayonnaise, dijon, balsamic vinegar, salt, pepper and pickles. Fold tuna in.

Take bread out of oven. Spread tuna over the three slices. Top with sliced tomato. Sprinkle cheese over the tomatoes.

Bake 7 minutes or until tuna is warmed and cheese is melted.

Top with a little more pepper and basil.

Makes 3 melts.
