Tater Tot Taco Casserole

  • 1 pound ground turkey

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 (4 oz) can diced green chiles

  • 1 (1 oz) package taco seasoning mix

  • 1 (15 oz) can black beans, rinsed and drained

  • 1 (15 oz) can corn, drained

  • 3 cups shredded Mexican blend cheese

  • 1 (28 oz) package frozen tater tots

  • 2 cups red enchilada sauce

  • Toppings: cilantro, sour cream, tomatoes, green onion

Pregeat oven to 375 F.

Spray a 9x13 baker with pam. Set aside.

In a large nonstick saucepan brown turkey with onion. During the last minute of browning add garlic. Drain grease.


Stir in 2 cups of the cheese, taco seasoning, green chiles, black beans and corn. Transfer to your prepared baker.


Layer tater tots on top. Evenly pour the enchilada sauce over the tots. Bake uncovered 45 minutes.


Sprinkle last cup of cheese over the tots and bake until melted- 3 minutes.


Let rest 5-7 minutes out of oven before serving.


Top with sour cream, tomatoes, green onion and cilantro.
