1 pound lean ground beef
1 onion, diced
2 cloves garlic, minced
1 (1 ounce) packet taco seasoning mix
1 (15 ounce) can corn, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (4 ounce) can diced green chiles, drained
1 (8 ounce) bag shredded Mexican cheese blend
1 (28 ounce) package frozen tater tots
1 (10 ounce) can red enchilada sauce
Preheat oven to 375. Spray a 9x13 baker with pam.
Cook the ground beef in a skillet over medium heat until completely browned, 5 to 7 minutes.
Add the onion, garlic, taco seasoning mix, corn, chiles and black beans to the ground beef; cook and stir another 10 minutes. Set aside to cool slightly.
Combine the ground beef mixture in a large bowl with about 3/4 of the Mexican cheese.
Pour about 1/3 of the enchilada sauce into the bottom of the prepared baking dish.
Make a layer of the beef mixture on top of the enchilada sauce.
Next layer the tater tots evenly across the beef bean mixture.
Pour remaining enchilada sauce over everything.
Bake uncovered in oven 40 minutes.
Sprinkle the rest of the cheese over the tots and bake until melted - 5 minutes.

Serve with sour cream, guacamole, diced tomatoes, lettuce and scallions.
