Tamale Casserole

1 pound lean ground beef
1 onion, diced
1 red bell pepper, diced
2 cloves minced garlic
1 packet taco seasoning
10 ounces red enchilada sauce
4 ounces diced green chiles
1 can black beans
1/2 cup sour cream
1 1/2 cups shredded Mexican cheese
2 boxes jiffy cornbread mix
1/3 cup milk
1/2 cup sour cream
2 eggs
1 can creamed corn
Preheat oven to 350.
Grease a 9x13 baker and set aside.
Brown beef with onion and bell pepper. During the last minute of browning add garlic.
Drain grease.
Stir in taco seasoning, chiles, enchilada sauce, 1/2 cup sour cream and shredded cheese. Pour into prepared baker.
In a large bowl mix jiffy mix, milk, sour cream, eggs and cream corn until combined. Let evenly on top of beef mixture.
Bake 50 minutes or until golden.
