Taco Bell Chicken Quesadilla

Makes 4 quesadillas


Sauce-

  • 1/2 cup light sour cream

  • 2 tablespoons light mayonnaise

  • 1 tablespoon chopped jalapeños

  • 1 teaspoon garlic powder

  • 1/2 teaspoon cumin

  • 1/2 teaspoon paprika

  • 1/16 teaspoon cayenne

  • 1/4 teaspoon salt

Quesadillas-

  • 1 cup 4 cheese Mexican shredded cheddar (can put more in there if you want)

  • 12 oz cooked shredded chicken (rotisserie works great!)

  • 4 flour tortillas (I use La Banderita carb counter flour tortillas)

Heat up panini press but if you don’t have one you can heat up a large nonstick saucepan over medium high. Spray with cooking spray.

For one quesadilla spread 2 Tb of sauce over half of a tortilla then top with 3 oz chicken and 1/4 c cheese. Fold over and shut. Cook until golden. 4 minutes. Flip. 4 minutes more.


If you’re using a cooking press you can just shut it and both sides will cook together.
