Sweet Cornbread

Ingredients:
1 cup yellow cornmeal
1 cup buttermilk
1 cup all purpose flour
1/2 teaspoon salt
3 1/2 teaspoon baking powder
1/3 cup packed light brown sugar
1/3 cup white sugar
1/3 cup vegetable oil
1 large egg
Preheat oven to 400. Grease one round 9″ cake pan.
Combine cornbread and milk in a medium bowl and let set 10-15 minutes.
Whisk together flour, salt, baking powder and sugar until combined.
Stir in oil, egg, and cornmeal milk mixture and whisk until combined. Don’t over mix.
Pour into greased pan and cook 25 minutes.
Check doneness with toothpick
