Summer Chicken Salad

  • 3 cups or 12 ounces skinless rotisserie chicken, finely chopped

  • 1/4 cup chopped walnuts

  • 1/4 cup fried cherries

  • 1/2 cup finely diced honey crisp apple

  • 1 tablespoon fresh minced basil

  • 1/2 tablespoon fresh squeezed lemon juice

  • 1/2 tablespoon salad supreme

  • 6 tablespoons light mayonnaise


In a medium bowl stir together chicken, walnuts, cherries, apples, basil, lemon juice, salad supreme and chicken. Start with 4 tablespoons and add enough to make the salad lightly coated but not drenched in mayo. I found that 6 tablespoons was perfect.


Serve on toasted low carb bread with some arugula or spinach.
