Summer Chicken Salad

3 cups or 12 ounces skinless rotisserie chicken, finely chopped
1/4 cup chopped walnuts
1/4 cup fried cherries
1/2 cup finely diced honey crisp apple
1 tablespoon fresh minced basil
1/2 tablespoon fresh squeezed lemon juice
1/2 tablespoon salad supreme
6 tablespoons light mayonnaise
In a medium bowl stir together chicken, walnuts, cherries, apples, basil, lemon juice, salad supreme and chicken. Start with 4 tablespoons and add enough to make the salad lightly coated but not drenched in mayo. I found that 6 tablespoons was perfect.
Serve on toasted low carb bread with some arugula or spinach.
