Simple Egg Salad with Basil

  • 6 hard boiled eggs, chopped

  • 2 tablespoons light mayonnaise

  • 1 tablespoon dijon mustard

  • little fresh squeeze of a lemon wedge (1/2 tablespoon worth)

  • salt and pepper to taste

  • 1 tablespoon fresh chopped chives

  • 1 tablespoon fresh chopped basil

  • 1 stalk or 1/3 cup finely chopped celery

  • romaine lettuce, sliced tomato and toasted whole grain sliced bread for sandwiches if desired

In a medium bowl combine mayonnaise, dijon, lemon juice, salt and pepper to taste. Sir in celery, chives, basil and diced egg with a fork. Lightly mash eggs until yolks are creamy.


Taste again for salt and pepper.


Makes 15 ounces worth or 5 servings worth
