Simple Egg Salad with Basil

6 hard boiled eggs, chopped
2 tablespoons light mayonnaise
1 tablespoon dijon mustard
little fresh squeeze of a lemon wedge (1/2 tablespoon worth)
salt and pepper to taste
1 tablespoon fresh chopped chives
1 tablespoon fresh chopped basil
1 stalk or 1/3 cup finely chopped celery
romaine lettuce, sliced tomato and toasted whole grain sliced bread for sandwiches if desired
In a medium bowl combine mayonnaise, dijon, lemon juice, salt and pepper to taste. Sir in celery, chives, basil and diced egg with a fork. Lightly mash eggs until yolks are creamy.
Taste again for salt and pepper.
Makes 15 ounces worth or 5 servings worth
