Roast Beef Wraps with Horsey Cream Cheese

20 ounces deli thin sliced roast beef
5 ounces shredded cheddar cheese
10 low carb whole wheat tortillas
2 1/2 cups fresh baby spinach
1 (8 ounce) package softened reduced fat cream cheese
1 1/2 tablespoons dijon mustard
1 tablespoon prepared horseradish
Beat cream cheese with horseradish and mustard until fluffy and creamy. Set aside.
Spread 2 tablespoons or 25 grams of cream cheese along the center of one tortilla.
Top with 1/2 ounce shredded cheese, 2 ounces roast beef and 1/4 cup spinach. A tiny bit of cream cheese along the very edge of the tortilla will help it stay together after you roll it.
Roll up and refrigerate until eating it eat right away.
Makes 10 wraps. (211 calories, 18 g carbs (11 of which are fiber so really there’s only 7 carbs), 11.6 g fat, 18 g protein!)
