Quesarito

  • 16 ounces lean ground beef or ground turkey

  • 1 packet Taco Bell taco seasoning

  • 16 burrito size tortillas

  • 3 cups shredded mild cheddar

  • 1 cup Uncle Bens Spanish Ready Rice

  • 1/2 cup Flavor Craver Chipotle taco sauce

  • 1 cup reduced fat sour cream

  • 1 cup mild cheddar nacho cheese sauce


Brown meat, drain grease. Add taco seasoning and 3/4 cup water to meat and simmer 7 minutes. Set meat aside.

Heat a large rectangular nonstick skillet to high heat. Spray with cooking spray.


Cook two tortillas at a time.


Each tortilla gets 6 tablespoons shredded cheddar and place a tortilla on top. Grill bottom for 2-3 minutes, flip and grill 2-3 minutes more.


Repeat with 6 more quesadillas.


Each quesadilla will then get 1 tablespoon chipotle, 2 tablespoons sour cream, 2 tablespoons nacho sauce, 2 ounces taco meat and 2 tablespoons rice.


Roll up and serve.

Makes 8 quesaritos. I halved this when I did it and put aside the extra taco meat for taco salads for lunch the following day.
