Peanut Butter Granola

2.5 cups old fashioned oats

3/8 t sea salt

2 oz chopped honey roasted peanuts

175 g creamy honey peanut butter

100 g honey

30 ml pure maple syrup

2 t pure vanilla extract

1/2 t cinnamon


Preheat oven to 300


Stir together oats, nuts and salt in a large bowl.


In a medium bowl combine peanut butter, honey and maple syrup. Microwave 45 seconds and stir until smooth. Add vanilla and cinnamon and stir into oat mixture.


Pour evenly across a parchment lined baking sheet. Bake 15 minutes, stir and bake 10 minutes more.


Remove from oven, stir one last time and use back of wooden spoon or spatula to flatten granola into one big sheet on baking pan. Let's cool completely. Will crisp up upon cooling.
