Mexican Pizza

  • 1 lb lean ground beef

  • 1 packet taco seasoning

  • 2/3 c water

  • 12 taco size flour tortillas

  • 3/4 c taco sauce

  • 1.5 c shredded Mexican blend cheese

  • 1.5 c shredded sharp cheddar cheese

  • 1.5 c refried beans

  • Chopped green onion

  • 1 large diced tomato


Preheat the oven to 375.


While oven is preheating brown beef and then drain grease, add taco seasoning and water and simmer 4 minutes. Set aside.


Pam the tops and bottoms of your tortillas.


On a greased baking sheet cook 2 tortillas at a time for 3 minutes each side until lightly golden and crispy. Do this 6 times or save time and do two sheets at once.


Remove and set aside.


Spread 1/4 c beans on the top of each 6 tortillas.


Top with 2 oz of beef. Place a plain tortilla on top of beef.


Spread 2 tablespoons taco sauce over it.

Sprinkle with 1/4 c shredded Mexican cheese and 1/4 c shredded sharp cheddar.


Add a few tomatoes and green onions to the top.


Repeat with the other 5 pizzas.


Place two at a time on baking sheet and cook 7 minutes or until melted and bubbly. Remove from oven, let set a couple mins before slicing into quarters.
