Granola

3 c old fashioned rolled oats
3/4 cups sliced raw almonds
1/4 c chopped walnuts
1/4 c pepitas
1/4 c sunflower kernals
3/4 c unsweetened flaked coconut
2 t cinnamon
1/2 t sea salt
1/2 c refined organic coconut oil
1/2 c pure maple syrup
2 tb packed light brown sugar
Preheat the oven to 300
In a large bowl combine the oats, almonds, walnuts, pepitas, sunflower kernals and coconut.
In a small saucepan over medium low heat melt the oil. Once melted add syrup and brown sugar, cook until sugar dissolves. Stir in cinnamon and salt.
Pour the liquid over the oat mixture and stir to evenly coat.
Spread the granola evenly across a parchment lined baking sheet and pat with wooden spoon to make a solid layer.
Bake for 20 minutes. Stir halfway into cooking. At 20 minute mark toss the granola around, turn the ban and bake for another 5 minutes, just until it reaches a light golden color.
Remove the pan from the oven and let it cool completely before removing the wonderful granola clumps and clusters from the pan.
