Ham and Egg Crustless Quiche

  • 1 tablespoon extra virgin olive oil

  • 1/2 cup diced yellow onion

  • 1 1/2 cups chopped ham

  • 1 tablespoon minced garlic

  • 8 large eggs

  • 3/4 cup whole milk

  • 1 tablespoons all-purpose flour

  • 1/2 teaspoon salt

  • 1/2 teaspoon fresh ground black pepper

  • 3/8 teaspoon basil

  • 1 cup shredded Gruyere and Swiss cheese

  • 1 tablespoon chopped fresh chives

Preheat oven to 375. Lightly grease a deep dish pie platter.

In a large nonstick skillet heat oil to medium and saute onion until translucent. Stir in ham and garlic saute one more minute.

Pour onion/ham mixture into pie platter.

In a large bowl whisk eggs with milk, salt, pepper and basil. Stir in flour. Pour over onions and ham.

Sprinkle the entire thing with cheese and then chives.

Bake 35-38 minutes or until golden and eggs are set.

Cut into 6-8 wedges and serve with sour cream and hot sauce!
