4 cups medium wide egg noodles
5 cups shredded green cabbage
8 slices bacon with grease
1 cup chopped onion
1 cup small curd 4% milk fat cottage cheese
2 cloves minced garlic
3/4 teaspoon caraway seeds
1/4 teaspoon salt or to taste and pepper to taste
Cook the egg noodles according to package directions, adding salt and a few drops of olive oil to the water. Drain and set aside.
Core and wash a small head of green cabbage. Slice in half then slice into thin strips, discarding the thickest white part in the middle.
Cut the bacon into 1 inch pieces. In a large pan, cook the bacon over medium high heat until just crispy.
Without draining, add the cabbage and onion. Saute several minutes until translucent and during the last minute add minced garlic.
Season with caraway seeds, salt and pepper.
Add the pasta to the cabbage mixture, along with the cottage cheese. Serve with kielbasa and sauerkraut if desired!
