Curried Chicken Salad with Apples, Walnuts and Cranberries

  • 1 rotisserie chicken, skinned and shredded or 3 cups shredded chicken breast

  • 1/2 c light mayonnaise

  • 1 container (1/2 c) nonfat plain Greek yogurt

  • 2 t fresh lemon juice

  • 1 t curry powder

  • 1/4 t onion powder

  • 1/2 t sea salt

  • 1/4 t black pepper

  • 1/2 c crushed walnuts

  • 2 oz diced honeycrisp apple

  • 2 oz diced granny Smith apples

  • 1/2 c (60 g) dried cranberries or cherries

  • 2 stalks diced celery


Whisk together mayo, yogurt and lemon juice in a large bowl. Stir in spices. Stir in walnuts, cranberries, apples and celery. Stir in shredded chicken. Serve alone or on wheat bread.
