Creamy Asian Peanut Butter Sriracha Chicken Wrap

  • 8 wraps or flatbreads

  • 2 1/2 cups (20 ounces) shredded grilled chicken

  • 2 ounces chopped honey roasted peanuts

  • 2 1/2 cups coleslaw mix (shredded cabbage and carrots)

  • 1/4 cup chopped green onion


Sauce-

  • 1/3 cup creamy peanut butter

  • 2 tablespoons honey

  • 2 tablespoons lite soy sauce

  • 1/2 tablespoon sriracha

  • 1/2 t ground ginger

  • One large lime wedge or to taste


In a small bowl combine peanut butter with honey, soy sauce, honey, sriracha, ginger and lime juice with a fork. Whisk until smooth and creamy.


Lay a wrap out and spread 2 tablespoons (3/4 ounce) of sauce in the middle. Sprinkle 1/4 ounce peanuts on top of the chicken And a tablespoon of chopped green onion. Spread 2 1/2 ounces chicken over the entire thing and top with a small handful of the coleslaw mixture. Fold up, refrigerate and eat.
