Crab Roll

1/3 cup light mayonnaise
3/4 teaspoon coarse dijon mustard
1 teaspoon grated lemon zest
3/4 tablespoon fresh lemon juice
1 clove minced garlic
fresh ground salt and pepper to taste
26 ounces flake imitation crab meat
leafy greens
fresh chopped scallions
6-8 hot dog buns
Spreadable light butter
In a medium bowl whisk together mayo, Dijon, zest, lemon juice, salt and pepper. Fold crab meat snd cover and chill for a few hours before serving.
Preheat oven to high broil. Spread a light coating of butter on the insides of the hot dog buns and toast under broiler until golden brown 3-4 minutes. Remove from oven and top each bun with greens and crab meat. Sprinkle with scallions. Serve.
Makes 6-8 rolls.
