Chocolate Chip Pudding Cookies

  • 1/2 c softened unsalted butter

  • 3/4 c packed light brown sugar

  • 1 t pure vanilla extract

  • 1 large egg

  • 1 (3.4 oz) box instant vanilla pudding mix

  • 1/2 t baking soda

  • 1/4 t salt

  • 1 1/4 c leveled all purpose flour

  • 3/4 c semi sweet chocolate chips plus several more to push into tops of cookies once made into balls

  • 3/4 c milk chocolate chips


Preheat oven to 350.


Line a baking sheet with parchment paper.


Cream butter and sugar until light and fluffy.


Stir in vanilla then egg.


Stir in pudding mix, baking soda and salt. Stir in flour and then chocolate chips


Roll dough into 2 Tb (1.5 oz) balls and push a couple single chocolate chips into the tops of each.


Line up balls 2 inches apart on prepared baking sheet.


Cover with plastic and put the sheet in the fridge for one hour.


Bake for 10-14 minutes or until edges just begin to turn golden.


Let rest on hot baking sheet 5 minutes and then transfer cookies to cooling rack.
