Chicken Meatball Slider

  • 1 lb lean ground chicken

  • 1 large egg

  • 1/2 cup panko bread crumbs

  • 1/2 cup (1 oz) fresh grated parmesan plus additional for topping sliders

  • 1/2 teaspoon sea salt

  • 1/8 teaspoon black pepper

  • 1 tablespoon fresh minced basil

  • 1 tablespoon fresh minced oregano

  • 1 tablespoon fresh minced parsley

  • 2 large cloves garlic, minced

  • 3/4 cup good quality marinara. (San marzano)

  • Fresh basil leaves

  • Freshly grated parmesan

  • 12 whole wheat slider buns


Preheat oven to 350.


Ina large bowl whisk your egg, stir in parmesan, bread crumbs, herbs, garlic and chicken.


Use your hands to combine.


Make 12 one ounce meatballs.


Line a baking sheet with foil and spray with pam. Put meatballs on sheet and lightly spray tops with pam.


Bake for 20 minutes or until internal temp is 165.


Grate a little more fresh parm on the tops and serve on whole wheat slider bun with a tablespoon of marinara, basil and cheese.
