Casey’s Meatloaf

  • 1 tablespoon extra virgin olive oil

  • 1/2 cup finely diced green bell pepper

  • 1/2 cup finely diced onion

  • 2 pounds 80/20 ground beef

  • 1 cup crushed ritz crackers (one sleeve worth)

  • 1 cup shredded sharp cheddar

  • 2 eggs

  • 1/4 cup ketchup

  • 2 tablespoon Heinz 57 steak sauce

  • 3/4 teaspoon salt

  • Fresh ground pepper to taste

  • 3 tablespoons ketchup

  • 1 tablespoon honey

  • 1/2 teaspoon worcestershire


Preheat oven to 350. Grease a loaf pan. Set aside.

In a medium sauté pan heat olive oil over medium heat and add bell pepper and onion. Sauté until translucent- 5 minutes.


In a medium sized bowl whisk ketchup with steak sauce, salt, pepper and eggs.

In a large bowl mix beef with cracker crumbs and cheese. Do not over handle.

Stir cooked peppers and onion into medium bowl with ketchup.

Pour ketchup pepper mixture into large bowl with ground beef. Use your hands to fold everything together. Do not over handle.

Pour mix into loaf pan. Gently press the meat into pan.

In a small bowl whisk the 3 tablespoons of ketchup with honey and worcestershire. Brush this glaze over the meatloaf.

Bake uncovered for 60 minutes. Checks center for doneness it needs to be at 160 degrees.

Let rest for 15 minutes before slicing. Serve with mashed potatoes!
