Buffalo Turkey Burger

1 (16 oz) package lean ground turkey
1 large egg
1/2 cup panko bread crumbs
Sea salt and freshly ground pepper
2 stalks celery, diced
2 green onions, diced
1/2 cup crumbled blue cheese
3 oz coleslaw salad mix
1 tablespoon extra virgin olive oil
3 tablespoon franks buffalo sauce

In a medium bowl prepare coleslaw by mixing together coleslaw mix, 1 diced green onion, 2 diced celery stalks, 1 teaspoon extra virgin olive oil, a pinch of salt and pepper and 2 tablespoons buffalo sauce. Set aside
In a large bowl use a fork to beat egg with pinch of salt, pepper, 2 tablespoons blue cheese, 1 diced green onion and 1/2 cup panko. Add ground turkey to this and toss to combine.
Use hands to make 5 equal patties.
Heat a large skillet over medium high heat. Add 2 teaspoons olive oil to skillet and cook patties for 8 min per side or until done.
Top each patty with blue cheese and slaw mix.
