Buffalo Chicken Quesadilla

  • 4 burrito sized flour tortillas

  • 12 ounces cooked chicken breast, shredded (skin a rotisserie chicken it works great!)

  • 1/2 cup Buffalo wing sauce

  • 2 tablespoons ranch

  • 1/4 cup spreadable cream cheese

  • 6 ounces shredded mozzarella


Heat up quesadilla maker.


In a medium bowl toss chicken with Buffalo sauce and ranch.

Spread two tablespoons cream cheese over two tortillas, leaving a half inch from the sides.

In an even layer spread chicken over cream cheese and sprinkle 3 ounces mozzarella over each of the two covered tortillas.

Spray quesadilla maker with nonstick spray and place the covered tortilla on the heated surface.


Lay bare tortilla on top. Close maker. Cook until golden. 4 minutes.

This recipe can be made using a nonstick griddle over medium high heat as well.
