Banana Crumb Muffins

  • 1 1/2 cups flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 3/4 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 3 ripened mashed bananas

  • 1/2 cup white sugar

  • 1/4 cup light brown sugar

  • 1 egg

  • 1 teaspoon vanilla

  • 1/3 cup canola oil

  • 1/3 cup packed light brown sugar

  • 2 tablespoons flour

  • 1/2 teaspoon cinnamon

  • 1 tablespoon unsalted butter


Preheat oven to 375 F.


Line a standard muffin pan with 10 liners.


In a large bowl mix together flour, baking soda, baking powder, salt, cinnamon and nutmeg.

In a separate bowl beat bananas with both sugars, egg, vanilla and oil.

Stir the banana mixture into the flour mixture. Stir until just combined do not over mix.


Spoon into the liners.


For the crumb topping mix together brown sugar, flour and cinnamon. Cut in butter with a fork and continue to cut until it all resembles coarse cornmeal or sand. Sprinkle over the tops of muffins.


Bake 18-20 minutes in the oven or until toothpick is clean.
